烤椰汁年糕

口感似雞蛋仔, 加左芝麻味道又似煎堆, 最好整到細細件方便一人一個唔駛切~


材料

糯米粉 100g
澄麵 20g
椰漿 80g
牛奶 40g
雞蛋 2隻
砂糖 80g
椰子油 1湯匙
白芝麻 適量

做法

1) 牛奶, 砂糖, 椰子油混在一起用微波爐/ 隔熱水座至糖溶化IMG_2963

2) 之後加入椰漿內拌勻IMG_3040

3) 加入已打均雞蛋後拌勻IMG_3041

4) 篩入糯米粉及澄麵, 拌勻至沒有粉粒IMG_2972

5) 粉漿再過篩3次IMG_2973

6) 粉漿大約有380ml, 如果想用其他容器的可以參考IMG_3045

7) 倒入己掃油容器內, 洒上白芝麻鋪面, 放入已預熱180°c 焗爐焗40分鐘至熟透IMG_3046
